You generally can’t go wrong with any chicken dish here, but I really like the flavour saturation in these thighs. The rice/kale combo has a hint of turmeric to mellow the dish, and then the mint sauce ties everything together.
The mint sauce doesn’t freeze too well, but it still does the job once thawed. I suggest eating this one fresh.

I felt this dish was missing something. Perhaps more vegetables? The flavour was a bit repetitive, unfortunately the mint sauce didn’t really deliver.
